No slices, no sizes, no thirty-minute wait. The trays are already out and already hot. You decide how much you want — two fingers wide or half the tray — and you pay for exactly that.

Roman trays are cut, not sliced. Scissors, straight down, as much or as little as you asked for. That is what al taglio means — by the cut.

On the scale, into the paper or the box, handed over hot. Price follows grams, so a small piece really is a small price.

Al taglio is just Italian for tingi.

Why it tastes like that

The dough takes two days.

Every tray starts wet and slow — a high-hydration dough left to ferment for 48 hours before it sees the oven. That is where the open crumb comes from, and the blistered underside, and a crust light enough that a piece at 1AM does not sit on you.

Poblacion after midnight is full of places to drink and short on places to eat well. We fixed our half of it. The counter runs sixteen hours a day, seven days a week — and it is the same 48-hour dough at 1PM and at 1AM.
