No slices, no sizes, no thirty-minute wait. The trays are already out and already hot. You decide how much you want — two fingers wide or half the tray — and you pay for exactly that.

Walk up to the counter and look at what is out. Whatever is in front of you is what is ready — no menu to squint at.

Roman trays are cut, not sliced. Scissors, straight down, as much or as little as you asked for. That is what al taglio means — by the cut.

On the scale, into the paper or the box, handed over hot. Price follows grams, so a small piece really is a small price.

Why it tastes like that
Every tray starts wet and slow — a high-hydration dough left to ferment for 48 hours before it sees the oven. That is where the open crumb comes from, and the blistered underside, and a crust light enough that a piece at 1AM does not sit on you.
